Thickness of the base

Most people think that a thicker base is better so that the heat gets distributed evenly. But a thicker base will take longer to heat up and may make the dosa soggy in the middle. A medium thickness is a better option as it heats up quickly. Also, make sure that it has an even base free from dents or bumps. This ensures even cooking and prevents the batter from spilling over.

No coating

Teflon-coated tawas were all the rage at one point in time but they aren’t so popular now because of their health hazards. Non-stick is not bad per se, but you have to know how to use it correctly. If you are using a non-stick Tawa, do not use metal spoons or spatulas to spread the batter or flip the dosa as they can scratch and peel off the coating. It is best to avoid non-stick coating altogether with dosas as they tend to soak up more oil than necessary and prevent crispiness in dosas.


Dosa is a thin pancake that contains no leavening agents. It will not rise on its own, so the pan has to be heavy enough to distribute the heat evenly across the surface and cook the dosa thoroughly without burning it

Can dosa be made on an induction stove?

It is quite difficult to make dosa on an induction stove.

The main problem you will face is that the batter has to be spread quickly right after pouring on the pan. In this case, it will not be possible to spread the batter as we do on a gas stove.

If you want to make dosa on an induction stove, use a non-stick Tawa/pan which has a good bottom, and pour one tablespoon of oil in the pan before pouring the batter. After this, pour one spoonful of batter and spread it immediately by taking the pan off from the burner.
